Refurbished thin carbon steel chef knife made in the USA from approximately the 1930s to 60s. It was a little sharpened in requiring a thinning for best performance but was originally this basic geometry. A no-frills work knife but with good quality steel and wood and now with a smooth cutting thin convex grind.
Great for slicing cooked or uncooked proteins and great for veggies.
