Tichet 18.5" Flexible Slicer Carbon Steel Paris France 1890s-1920s?
Peculiar massively long carbon steel slicer made by Tichet in Paris France possibly from the 1890s to 1920s but possibly earlier. This knife has had it's Cuisine massive AKA Nogent style handle replaced for a stacked leather arrangement at some point but it was done very well and it fits the hand marvelously.
This knife has been thinned down after being sharpened in to have a thick edge. Part of the Tichet marking was lost in the ages but their trade mark Lion and Montmartre is still visible the 76 Rue St Saveur Paris mark is missing but this was made long before thier move to Nogent and represents one of the great Paris knife-makers of the 19th century.
