Thiers Issard 4 Star Elephant 8” Chef Knife Carbon Walnut or Pear Wood 1960’s-70s
Vintage hand forged after drop forged and hand ground 4 Star Elephant Thiers Issard Sabatier. Knife has seen more rust and neglect than use and sharpening. It had some pits and that we mostly buffed out. Handle is secure despite the crack.
This knife was sharpened down some, originally a bit wider its edge got thick and was thinned along the faces to bring it back to a good geometry. Blade is 99% straight, there is a slight wave in it, it had been straightened but this was the limit of grinding from the sides without loosing too much height. There are some pits here and there from previous rust as well.
