Ed Wusthof Dreizackwerk Re-Tipped 9.75" Slicer Carbon Steel Solingen 1950s

Vintage Wusthof 9.25 inch carbon steel slicer retipped from a 12" made it in the 1950s most likely, with hand forged after drop forged blade that was also hand ground in the old style with Fruitwood handle and brass rivets. The tang is so thin that it allowed fro some flex in the handle causing a crack in the center of both scales, some glue has been added but priced accordingly. 

The curved area of the handle at the bolster Junction strongly suggest this is a postwar knife as this feature really took off then. 

This knife represent the style of knife, making done in Solingen well, skilled hand work was a crucial part of the process. Wusthof sought to remove these costly and time-consuming processes and were successful in doing so in the 1970s with their stainless steel knives that were exported in great numbers taking the wind out of the sails (and sales) of the various Sabatier brands that dominated professional kitchens.

This knife has been re-ground and thinned behind the edge on a large 3 foot diameter Japanese water stone wheel (kaiten mizu toishi) and then resurfaced with a medium fine finish, our take on an old style grinding and finishing technique. While the particular wheel used to refurbish this knife is typically used in Japanese knife making it is very similar to the old grinding wheels used to shape European and American hand ground cutlery. A convex face to a blade greatly increases a knife's performance as there is less sticking as there is on a flat face and the blade does not get thick behind the edge nearly as fast as with a flat faced blade. Being that we are often working with old blades that need re-shaping and might have been rusted expect some minor imperfections, we try to give a fresh start to our re-ground blades with an eye towards their original grind style and keeping as much metal is needed on a blade when ever possible.
